Day 21 Recipe - Poosanikkai Halwa (White pumpkin Halwa)

Ingredients:

Poosanikkai (White Pumpkin) - grated : 2 cups
Sugar : 1 1/4 cup
Ghee : 3/4 cup
Kesari powder
Elachi

For Garnishing:

Cashewnuts/ Cucumber seeds
Dry Grapes

Method:

  • Grate the Pumpkin.
  • Mix the pumpkin and sugar in a bowl and cook that in the pressure cooker like you do for rice.
  • Take it out . In a pan, add the cooked pumpkin and start cooking in a medium flame (Please lower the flame whenever necessary)
  • Add the Kesari Powder. Stir it until it comes out of the pan. Add ghee in between.
  • Remove from the fire and change the halwa to a serving dish.
  • Fry the cashewnuts / cucumber seeds and dry grapes in ghee (each seperately), add on top of the halwa.

Note: After taking out of the pressure cooker, the pumpkin is going to be a liquid form. Do not worry. Once start cooking it will come out as an Halwa. Please do not add water to the pumpkin while cooking in the pressure cooker as pumpkin itself has lots of water.
